What is Essenza Gel?
Essenza Gel is a natural fibre that stabilizes and thickens your gelato. It is similar in structure to widely used gums and hydrocolloids, but has several applications, such as completely replacing an additive or increasing the stability of water-in-oil solutions. But Essenza Gel is even more than this: it has viscous, emulsifying, and foaming capabilities, promotes air intake, and lowers the freezing point.
What is Essenza Fat?
Essenza Gel is based on soluble and insoluble vegetable fibres that can act as emulsifiers and stabilizers on animal and vegetable fats. In particular, its gelling action with free water, hot or cold, can replace chemical emulsifiers and hydrocolloids. In industrial gelato making, it can be used to create a solid vegetable fat without additives, which can replicate the effect of saturated fats and limit dripping.
