What is in LESSenza?
LESSenza is the new frontier of the ‘sweet’ taste experience. It is a sustainable product because it is made by processing food-waste products, from which we obtain the best qualities. It reduces added sugar by up to 30%, improving the taste and texture of gelato. It is composed of 100% vegetable fibre and is the perfect base for whatever flavour you have in mind for your product.
How can I use LESSenza?
LESSenza has two missions: reduce sugar in order to reduce the freezing point and delay crystallization, and improve gelato by adding it on top. The structure will be longer, creamier, with a fuller and more interesting mouthfeel. LESSenza can also be used as an ingredient in its own right.
Why use LESSenza?
In addition to its countless applications and enhancing properties, LESSenza boasts some very interesting technical features. As well as replacing sugars while maintaining the structure and body of gelato, it can also be used as a humectant, texturizing agent, thickener and filling agent in confectionery products.
