What is Essenza Gel?
Essenza Gel is a natural fibre whose main role is to stabilize and thicken. In structure, it is similar to the most common gums and hydrocolloids, but it offers so much more. It is useful in circumstances where you want to fully replace an additive, increasing the stability of water-in-oil solutions. It has viscous, emulsifying and foaming capabilities and promotes air intake. It also lowers the freezing point and is widely soluble in water at any temperature.
What is Essenza Fat?
Essenza Fat is a product based on soluble and insoluble vegetable fibres that wields a dual power: it acts as an emulsifier and stabilizing agent on animal and vegetable fats and has a binding and gelling effect on free water. It works in cold processes or with pasteurization, replacing chemical emulsifiers and hydrocolloids. Essenza Fat allows you to create a solid, vegetable fat similar to margarine but without additives and replicating the effect of saturated fats. In gelato products, Essenza Fat also limits dripping.
